These beautiful cookies are made with rich delicious ricotta cheese and they are traditionally made during the Christmas and Easter holidays. Spoon a teaspoonful of batter in rows onto a parchment lined cookie sheet

bake cookies in the oven at 350 degrees for approximately 12 minutes or until bottom has turned a light brown.
Let the cookies cool on a rack and then dip them into the citrus frosting
sprinkle them with colorful sprinkles and let frosting dry before placing them in storage containers.

Ricotta Cheese Cookies

- 1/2 lb butter, softened 
- 2 cups sugar 
- 1 lb (16 oz) whole milk ricotta cheese 
- 2 large eggs 
- 2 tbsp. vanilla extract 
- 4 cups all-purpose flour 
- 1 tsp. salt 
- 1 tsp baking soda 
- 1 tsp baking powder 
- Citrus Glaze
- 1 cup powdered confectioners sugar 
- 1/4 cup water or milk 
- zest of a lemon or orange 
- colorful sprinkles 
Directions
- Preheat oven to 350 degrees F.
- Cream together butter and sugar and then beat in ricotta cheese, eggs and vanilla extract until mixture is well blended
- In a separate bowl, sift together flour, salt, baking soda and baking powder.
- Slowly add flour mixture into wet ingredients and mix together until combined.
- Drop a teaspoon of dough onto greased cookie sheet.
- Bake for approximately 10 minutes or until bottoms on lightly browned.
- Transfer cookies to cooling rack and let cool before icing.
- Prepare glaze by mixing powdered sugar and water or milk and then add zest. Glaze coat a spoon and not be too watery.
- Dip each cookie into citrus sugar glaze and then sprinkle each cookie with rainbow sprinkle
- After glaze sets, the cookies can be stored in a covered ceramic jar or plastic container.
