Ingredients
- 1 cup Farro
- 1 cup frozen sweet peas
- 1 cup sliced cherry tomatoes
- Extra Virgin Olive Oil
- White Balsamic Vinegar
- Salt & Pepper
- Locatelli Parmigiano Reggiano Cheese
Instructions
- Cook one cup of Farro in two cups of boiling water. Simmer for 15-20 minutes. Check farro periodically to make sure it does not over cook as it will become gummy.
- In a small pot, boil frozen sweet peas until tender. Chop cherry tomatoes. Add peas & tomatoes to the fargo in a large bowl. Season with salt & pepper and generous amount of olive oil & vinegar. Top with freshly grated Parmigiano Reggiano cheese. Serve warm or chill in the fridge! Farro may soak up oil and vinegar so feel free to add more before you serve. Enjoy!
