Wood Fired Sausage, Peppers, Mushrooms and Potatoes
Wouldn’t you agree there is nothing better than the aroma of food grilling over an natural wood fire? It just draws you in …heightening all of your senses… getting hungry yet?
We have an assortment of outdoor grills but my husband loves to build a fire in a simple backyard fire pit like this one. He likes using seasoned local wood like maple, mesquite, apple or cherry wood and he allows the wood to burn down to glowing embers before placing the food on the grill grate…. Once the food is on the grill…just grab a comfortable chair and let the magic happen…..
We seasoned each of the vegetables and potatoes with olive oil, salt, pepper and rosemary and then grilled each separately in a grill skillet until they were tender and caramelized.
Here’s the finished dish…bet you can’t wait to dig in!! Serve with a loaf of crispy Italian bread and a bottle of hearty red wine….We hope you will share this dish with your family and friends….Buon appetito!
- 3 lbs Italian sweet sausage links or ring ( with fennel seeds)
- 2 lbs red bliss potatoes, sliced
- 2 white onions, sliced
- 3 large red bell peppers, sliced into strips
- 2 lbs white or bella mushrooms, sliced
- 1/4 cup extra virgin olive oil
- Sea salt and fresh ground black pepper
- 4 sprigs fresh rosemary
- Build your fire – allow wood to burn down to glowing embers
- Place grill grate on top of fire and brush grate with oil if it is not seasoned so sausages won’t stick
- When fire is ready, place sausages on grill. Turn the links occasionally so they cook evenly and are nicely browned on all sides… approx 15-20 min.
- Meanwhile, coat potatoes and vegetables with olive oil and season well with salt pepper and 2 rosemary leaves.
- Grill each vegetable and potatoes separately to allow each to cook throughly in grill basket until tender and lightly browned.
- Transfer cooked potatoes and vegetable to a beautiful serving platter and top with cook sausages
- surround platter with 2 fresh rosemary sprigs and serve!
- Accompany dish with a crispy loaf of Italian bread and a bottle of hearty red wine.
