Cilantro & Parsley Pesto
Cilantro & Parsley Pesto is so vibrant, fresh and perfect for summer dishes!
Pesto sauce originates from northern Italy in Genoa and is traditionally made with basil, garlic, pine nuts, parmigiano cheese & olive oil. These ingredients are then ground into a paste like sauce using a motar & pestle. Pesto sauce can be used for many dishes and we will soon be sharing a lovely pesto recipe by Michelle, so stay tuned! However, today we have a less than traditional variation of this fresh sauce using cilantro & parsley.
I had so much fun experimenting with this sauce yesterday and I could not wait to share it with you! It is similar to a Chimichurri sauce and it paired nicely with our grilled london broil. This simple to prepare pesto will add a bright layer of flavor to any dish.
Recipe:
If you have a mortar & pestle, definitely use it! However, a food processor will do the job quick & easy!
- 1 bunch of Cilantro
- 1/2 (or less) of a bunch of Parsley
- A couple tablespoons of Olive Oil
- A drizzle of Honey
- 1 teaspoon Lemon juice
- Salt & Pepper to taste
Put everything in the food processor until it becomes a sauce like consistency. Exact measurements for this recipe are not crucial. This sauce can be stored in the fridge for up to a week. Drizzle your pesto over roasted veggies, broiled fish or as we did with grilled london broil! I hope you enjoy!
