Easy Bolognese Sauce

Some bolognese sauces are very complicated and take a long time to prepare.  I created this recipe to simplify the process and the end result is a rich, flavorful sauce that goes well with homemade gnocchi, rigatoni, perciatelli, bucatini or pappardelle pasta…  Here we served it at a cooking class with our homemade potato gnocchi.

Serves: 4 cups
Ingredients
  • 2 tbsps extra virgin olive oil
  • 1 lb ground chuck
  • 4 cloves garlic, minced
  • 1/2 yellow onion, minced
  • 1 carrot, peeled and grated fine in box grater.
  • 1 tbsp. dried italian herbs
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 cup dry red wine
  • 1 32 oz can plum tomatoes, blended to desired consistancy
  • 1 tbsp. tomato paste
  • Sea salt and ground black pepper to taste
  • 1/2 cup heavy cream
  • 1/4 tsp. freshly grated nutmeg
  • 1/4 cup fresh basil, sliced into strips.
Instructions
  1. Heat olive oil in a large (12 in) skillet over medium high heat.
  2. Add the ground chuck, crumbling the meat with a wooden spoon until meat has browned lightly and most the liquid has been absorbed.
  3. Add the garlic, onion, carrot, italian herbs, red pepper flakes , salt, pepper to taste and stir to combine for 1 minute.
  4. Pour in the wine and sir to scrape up any brown bits in pan
  5. Add the tomatoes, tomato paste and stir to combine all ingredients. Adjust seasoning to taste.
  6. Bring mixture to a gentle simmer for 10 minutes
  7. Add the cream, nutmeg and fresh basil leaves and simmer for 10 minutes more or until mixture is thickened.
  8. Add sauce to your favorite pasta!! Buon Appetito
