Favorite “Sunday” Chicken
This is our favorite “Sunday” chicken… tender, juicy and quick to prepare.. and each piece of chicken is packed with savory, lemony caramelized yumminess…
There are two schools of thought when it comes to roasting chicken pieces. Some Italian moms prefer to cook their chicken lower and slower at 325 degrees for 2 -2.5 hrs and others cook it higher and quicker at 425 degrees for 1 – 1.5 hrs. Both methods yield a tender tasty dish. My mother opted for the higher temp and quicker method… hope you enjoy.
After you clean and dry your chicken pieces….place them on a large cookies sheet and coat them with fresh chopped herbs, whole garlic cloves, cherry tomatoes, scallions, yellow onions, olive oil, sliced lemons and then sprinkle chicken with dry white wine. … Place chicken in preheated 450 degree oven and let the magic begin… the chicken skin will brown and caramelize and natural chicken juices will be released and blend with all of the herbs to make an awesome sauce that will require a crispy piece of Italian bread to dunk into. ….
Here is the chicken right before it goes into the oven ..
- 10 – 12 pieces of bone in chicken parts (thigh, legs, breast, wing)
- 1 bulb of garlic separated into cloves
- 3 scallions, cut into 3 ” pieces
- 1 onion, quartered
- salt and pepper to taste
- 1 tbsp dried herbs de Province
- 1 bunch fresh chopped parsley
- 1 bunch fresh chopped rosemary
- 2 sprigs fresh lemon thyme
- 1/2 cup cherry tomatoes, cut in half
- 1/4 cup extra virgin olive oil
- 1 lemon sliced thinly into rounds
- 1/4 cup dry white wine
- Preheat oven to 450 degrees
- Place chicken pieces on a large rimmed cookie sheet and toss with rest of ingredients until all chicken pieces are coated.. Sprinkle chicken with dry white wine
- Place chicken in oven preheated 450 degrees and roast uncovered for 30 minutes,
- Turn chicken pieces and roast for another 30- 40 minutes or until skin begins to brown and caramelize
- Remove from oven and transfer chicken pieces to large serving platte.
- Add some water to cookie sheet to loosen and scrape up all of the delicious drippings. Stir to form a sauce. Strain juices and pour over chicken pieces … May garnish with extra lemon slices and fresh rosemary. Enjoy

- Pleas note: Can take out breast pieces after 40 min of cooking time so they don’t dry out.
