Look at what my sister, Francine, just made!!  Fresh green beans and potatoes simmered slowly in a light tomato sauce until deliciously tender.   OMG,.. this brings us right back to our childhood.   Our mother would prepare this for dinner along side her perfectly roasted chicken or pork but most of the time, she would just serve it as main course for lunch ..on a Saturday afternoon …with a toastie loaf of Italian bread, a piece of cheese and a crisp green salad.   Perfect for a cool afternoon lunch or light dinner, this dish is very tasty and so satisfying and heartwarming.    I hope you will try it …..and maybe for some, it will bring back childhood memories for you too.. .. Green Beans and Potatoes stewed in a light Tomato Sauce

Ingredients

  • 1 lb fresh green beans, washed and trimmed

  • 1 small yellow onion, minced

  • 1 garlic clove, minced

  • 1/4 cup olive oil


  • 1- 28 oz can plum tomatoes, crushed by hand

  • 1/2 cup water

  • 2 medium white potatoes, peeled and cut into quarters

  • 1 tsp salt and black pepper

  • 1/2 tsp red pepper flakes

  • 2-3 leaves fresh basil leaves

Directions

  • In a medium pot, heat olive oil to medium heat. Then add garlic and yellow onion and sauté mixture slowly until they are softened and translucent.
  • Add green beans, potatoes and tomatoes to onion garlic mixture. Stir to combine all ingredients and then season with salt, pepper and red pepper flakes.
  • Cover the pot and simmer vegetables over medium heat for approximately 30-40 minutes or until beans and potatoes are tender. Stir occasionally and taste the cooking broth to ensure the mixture is well seasoned. Adjust seasoning as necessary. When done, transfer vegetables to a beautiful dish and sprinkle with fresh basil leaves and serve with crispy Italian bread….Enjoy
