Homemade Pizzelle Cookies

Look at that beautiful face…Our little Carolena is really enjoying nonna’s thin and crispy pizzelles.  They were made for our Christmas dessert however,  they can be made any time of year and special occasions like showers, weddings, and I will be making them again for her one year birthday party!  

To make the cookies, you will need a Pizzelle iron like this one.  I have the Cucina Pro . The irons are  available in most Italian speciality stores or can be purchased easily on Amazon.com.

This one has a non stick surface and makes two 5″ diameter cookies at a time. The process goes pretty quickly as the iron gets really hot so be careful not to burn your fingers…  The batter is thick and sticky and usually flavored anise seeds or anise extract but can also be flavored with vanilla, lemon or orange zest. Here is a picture of the pizzelles I made this Christmas.  It shows the consistency of the dough and the proper amount to spoon onto each iron

While the cookie is still warm, you can shape the cookie into a cup or roll it into a cigar shape or just lay flat on a vented tray.    After they cool, place them in cookie tins or a tightly fitted plastic container to keep them crisp.  Before serving, sprinkle some confectionary sugar on top of each one and serve.

Ingredients
  • 6 eggs
  • 1-1/2 cups sugar
  • 1/2 cup melted Crisco shortening
  • 1/2 cup melted butter
  • 2 tsps. anise seed or extract
  • 3-1/2 cups unbleached all purpose flour
  • 4 tsps. baking powder
  • Confectionary sugar – when ready to serve.
Instructions
  1. Cream eggs and sugar. Add cooled Crisco and butter and anise seeds or extract.
  2. Combine flour and baking powder and sift flour mixture into wet ingredients.
  3. Mix well, batter should be thick and sticky.
  4. Heat pizzelle iron. When green light appears, iron is ready
  5. Place a spoon fill on each iron and close iron and press to ensure cookie is thin. Wait 15 sec and check color of pizzelle, cook pizzelle till lightly browned. Remove each pizzelle carefully and place on a vented rack to cool. stack when cool.
  6. When cookie is still warm, it can be shaped into a cigar shape or a cup shape.
  7. Have fun and enjoy these delicious cookies. Store in airtight container
  8. Sprinkle with confectionary sugar when ready to serve.
