delicious crispy donut balls made with ricotta

Ingredients

  • 1 cup all purpose flour

  • 1 tbsp sugar

  • 2 tsp. baking powder

  • 1 tsp salt

  • 1 cup whole milk ricotta cheese

  • 3 tbsps whole milk

  • 1 egg

  • oil for frying donuts

  • Cinnamon Sugar coating
  • 1/2 cup sugar

  • 1 tbsps. cinnamon

Directions

  • Blend all the ingredients in a large bowl. set aside
  • In a heavy pot or fry daddy, prepare the oil for frying the donuts. Heat approximately 3 cups of your preferred frying oil (peanut, vegetable, coconut oil or shortening) The oil should be about 2-3 inches deep to allow room for the donuts to fry evenly
  • Test the heat of the oil by dropping in a bit of the dough into it and if it quickly rises to the top, it is ready.
  • Using 2 tablespoons, scoop out a portion of the dough and slide it gently into the oil with the second spoon. You can fry about 4-5 donuts at a time. turn the donuts in the oil so they fry evenly to a medium brown color. If they are browning too quickly, lower the heat a little. The balls will be irregular but that’s what makes them special. Drain them on paper towels and continue frying until all the dough is used up.
  • In a separate bowl, mix together a 1/2 cup sugar and 2 tbsp. cinnamon. Drop the crispy fried donuts into the mixture and roll them in the cinnamon sugar mixture. Place the donuts in a beautiful bowl and they are ready to serve! Buon appetito!
